s White Chocolate Cranberry Scones s   


Moist and delectable, these are pretty on a tray and always popular at a brunch, baby shower, or even for dessert!
Yields: 2 Dozen


Ingredients

2 cups Flour
1/3 cup Sugar
1 1/2 teaspoons Baking powder
1/2 teaspoon Baking soda
1/4 teaspoon Salt
6 tablespoons Butter
1/2 cup Buttermilk
1 Egg
1 1/2 teaspoons Vanilla
2/3 cup White chocolate chips
2/3 cup Sweetened dried cranberries (Craisens)


 
Instructions
Preheat oven to 375°.
Mix flour, sugar, baking powder, baking soda, and salt together.
Slice butter into small pieces and sprinkle over dry mixture. Cut butter in with a pastry blender, forks, or quick pulses in the food processor.
Pour in buttermilk, egg, and vanilla. Mix just until combined--dough will be sticky.
Fold in white chocolate chips and cranberries.
Drop by heaping tablespoon or cookie scoop on greased cookies sheets.
Bake at 375° degrees for 8 minutes or until set and just beginning to brown. Don't overcook--they can dry out quickly.
Serve warm or store in airtight container at room temperature until serving time.
