s Summer Strawberry Salad s   


This salad has an original dressing which, although it contains cream of coconut, is actually more citrusy and tangy in taste. Very yummy!
Yields: 8 Servings


Ingredients

6 cups Romaine lettuce chopped
3 cups Strawberries sliced
2 cups Pineapple cubed, fresh or canned
1 Banana sliced
1/4 cup water
1/4 cup cream of coconut
2 Tbsp. lemon juice
1 Tbsp. yellow mustard
1/2 tsp. ground ginger
1/4 cup sliced almonds toasted (optional)


 
Instructions
1. In a very large bowl toss together romaine, strawberries, pineapple, and banana. If desired, cover and refrigerate for up to 1 hour.

2. For dressing, in a small bowl whisk together water, cream of coconut, lemon juice, mustard, and ginger. If desired, cover and refrigerate. To serve, toss greens mixture with dressing to coat. If desired, sprinkle with almonds.

When I served this for staff lunch (May 2010) I used spinach instead of romaine lettuce. Mixing the fruits too far ahead of time makes the strawberries dye the others pink, so maybe best to hold off until no more than an hour before serving!
