Strawberries with Lemon Cream

A simple lemon cream cheese mixture fills fresh strawberries for a beautiful presentation.

Ingredients

1/3 cup Powdered sugar
1 package (8 oz.) Cream cheese (low fat is fine)
2 tsp. Lemon zest (zest of 1 small lemon)
1 1/2 tablespoons Fresh lemon juice (juice of 1 small lemon)
2 pints Strawberries


 

Instructions
In food processor or mixer, combine cream cheese, powdered sugar, lemon zest, and lemon juice. Blend until smooth. Chill at least one hour.

Cut stems from strawberries, leaving a flat surface. Rinse and pat dry. Place on serving tray, cut side down. Cut a V-shaped pocked in the pointed end of each berry, cutting about two-thirds of the way through to the bottom. Remove the V-shaped slice. Pipe chilled cream cheese mixture to fill each berry. Chill up to 3 hours before serving.
