Starter Chicken Curry

This simple curry is very mild in flavor and popular with lots of people. A variety of toppings make it fun!

Ingredients

3 boneless, skinless chicken breasts cut into bite-sized pieces
1/4 Cup flour
1 tablespoon Curry powder
1 1/2 teaspoons Salt
1/2 tsp. Pepper
1/4 Cup margarine or butter (1/2 stick)
1 large onion thinly sliced
2/3 Cup uncooked white rice
3 Cups chicken broth
Assorted toppings raisins, shredded coconut, chopped peanuts, hard boiled egg slices, granny smith apples


 

Instructions
In a zip-top bag, combine the flour, CURRY POWDER, salt and PEPPER. Add the chicken pieces and shake to evenly coat. Heat the margarine or butter in a large frying pan over medium-high heat. Add the chicken and cook for about 5 minutes, turning once, until browned well. Add the onion and rice and stir to blend. Pour in the chicken broth. Reduce the heat to low, cover, and simmer for 45 minutes or until the rice is cooked. Top with ingredients of your choice.
