Spicy Sicilian Nuts

Spicy, salty and sweet with an unusual combination of flavors. Very popular with Than!

Ingredients

2 Egg whites
2 tablespoons Honey
1 tablespoon Sesame seeds
1 1/4 teaspoons Coarse salt
1 teaspoon Pepper
1/2 teaspoon Ground cumin
1/2 teaspoon Fennel
1/4 teaspoon Cayenne
1/2 teaspoon Paprika
3 cups Nuts (cashews, peanuts)
2 teaspoons Grated fresh orange or tangerine zest


 

Instructions
Heat oven to 325 degrees. Combine spices and crush if needed (fennel seeds and peppercorns need to be ground a little). Whisk together spices, sesame seeds, honey, and egg whites until combined. Toss in nuts (original recipe called for cashews, I've also made it with peanuts) and stir until nuts are evenly coated. Spread on baking sheet in a single layer. Bake 20-25 minutes, stirring after 10 minutes, until golden brown and fragrant. Nuts will crist as they cool. Sprinkle orange zest over nuts while they are still warm.
