Sparkling Gingersnaps

This huge batch of gingersnap dough is full of buttery, spicy goodness (especially if your spices came from Penzey's!) My mom got the recipe from a friend and I've had them on many Christmases since childhood.

Ingredients

6 cups Flour
2 teaspoons Baking soda
1 1/2 teaspoons Salt
1 tablespoon Cinnamon
1 1/2 teaspoons Cloves
1 tablespoon Ginger
2 1/4 cups Butter or margarine
3 cups Sugar plus additional for rolling
3 Eggs
3/4 cup Molasses


 

Instructions
Mix flour, baking soda, salt, and spices in a large bowl. Cream butter and sugar in mixer. Add eggs and molasses. Carefully blend in dry ingredients. (My Kitchen Aid can just barely handle this batch). Chill dough for 24 hours. Shape into balls and roll in sugar. Place on greased cookie sheets and bake at 375 for 10 minutes.
