Shake ‘n Bake Chicken

Besides the fact that this meal rings the nostalgia bell, there’s another huge advantage: It takes ten minutes and there’s no clean-up whatsoever.

Ingredients

1 1/2 cups breadcrumbs
2 tablespoons Dried parsley
1 tablespoons Dried oregano
1 tablespoon Dried thyme
1 tablespoon Paprika
1/2 teaspoon cayenne
Salt & pepper
2 lbs Boneless chicken (breasts, thighs, or a combination)
1/4 cup Olive oil


 

Instructions
Preheat oven to 400°F.
Put breadcrumbs and spices into a Ziploc freezer bag and set aside. (A word about the salt and pepper: don’t skimp.)
Cut chicken into thick strips. Toss with olive oil, until each piece is nicely coated.
Take chicken, three or four pieces at a time, and drop into the Ziploc bag,. Seal and shake until chicken is covered in breadcrumb mixture. Remove, shaking off excess, and arrange on foil-lined baking sheet, until all chicken parts are ready for roasting. Cook, turning once, for 20 minutes, until golden brown and crispy.

notes:  So easy, so yummy--Than loves it, very popular at staff lunch May 2012. Make a big batch of the seasoned crumbs and keep on hand for a quick meal. Pairs well with Bravas Potatoes. Works with bone in or boneless chicken, fresh or dried breadcrumbs (dried makes a crispier coating).
