s Senior Salute Hash Browns (Scaled Down) s   


Seasoned hash browns for a crowd.
Yields: 10 Servings


Ingredients

2 lbs. Frozen shredded hash browns
1 cups Onion finely chopped
1 tbsp. Garlic powder
1 tablespoons Salt
2 tablespoons Chili powder
1/3 cups Olive oil


 
Instructions
Preheat convection ovens to 450.
Thoroughly grease baking sheets with some of the olive oil (1 use 2 large baking sheets from chuch).
Spread frozen potatoes and onions on greased baking sheets.
Season with garlic powder, salt, and chili powder. (Amounts are totally approximate--sprinkle at will!)
Pour additional olive oil on top. Mix well.
Cook in convection ovens, stirring every 10 minutes. (Edges brown quickly, middle and bottom cook slower).
Potatoes are cooked in about 45-60 minutes, but can be cooked as long as 90 minutes for more crispiness.
Garnish with parsley before serving if desired.
