Sea Foam Candy

This light, crunchy candy is a favorite from our honeymoon.

Ingredients

2 cups Light Corn Syrup
2 cups Brown sugar
4 teaspoons Baking soa
2 pounds Dipping chocolate


 

Instructions
Line bottom and sides of 2 9x13 pans with lightly buttered aluminum foil. Set aside.

Combine sugar and corn syrup in a large, heavy cooking pot. Cook over medium heat, stirring often, until sugar dissolves. Continue cooking without stirring to 300° F on a candy thermometer, about 15 minutes. (A small amount of syrup will separate into brittle threads when dropped into ice water).

Remove from heat and quickly stir in baking soda, mixing well. Mixture will foam up and get a strange texture. Quickly scrape into prepared pans. Allow to set at room temperature until firm (overnight). Invert pans and peel off foil. Break into pieces.

Melt chocolate in large microwave-safe bowl. Dip candy pieces in chocolate and place on waxed-paper lined baking sheets to set. Store tightly covered at room temperature.
