This is a childhood favorite that is just as tasty for adults! These muffins are rich and moist and really don't need any butter. They are great for breakfast or with dinner.

Ingredients

1 cup Sugar
1/2 cup Butter
2 Eggs
1 cup Plain yogurt
1 teaspoon Vanilla
2 cups Flour
3 teaspoons Poppyseeds
1/2 teaspoon Salt
1/2 teaspoon Baking soda


 
Instructions
In a large bowl, cream sugar and butter. Beat in eggs one at a time. Beat in yogurt and vanilla. Gently stir in flour, poppyseeds, salt, and baking soda until just moistened. Spoon batter into greased or paper lined muffin tins and bake at 400° for 15-20, until lightly browned on top. Cool on wire rack 5 minutes before serving.
