s Pasta Pea Salad s   


This attractive pasta salad is one my mom used to serve a lot in the summer. It has good texture contrasts and a nice combination of ingredients.
Yields: 8 Servings


Ingredients

2 cups Peas thawed
1 can Olives sliced
1 bunch Fresh spinach torn into bite sized pieces
4 cups Pasta (measurement is for already cooked--penne is nice, any kind works)
1/2 cup Parmesan grated
1 cup Italian dressing
1 package Ramen noodles crushed into small pieces
1/2 cup French fried onions (the kind sold in a can for green bean casserole!)


 
Instructions
Combine peas, olives, spinach, pasta, and parmesan. Toss in dressing. If desired, chill for several hours. Just before serving, toss with Ramen noodles and French fried onions. Add additional dressing as needed.
