Oven Roasted Broccoli

This simple preparation method makes the best broccoli ever!

Ingredients

1 pound Broccoli cut into large florets
2 tablespoons Olive oil
Salt & pepper
4 cloves Garlic sliced
1 Lemon
1/4 cup Pine nuts toasted
1/3 cup Parmesan cheese


 

Instructions
Preheat the oven to 425.

Make sure broccoli is cut into relatively large florets and is completely dry. Include the sliced stem too, it roasts just fine. Put the broccoli on a foil-covered cookie sheet. Toss with olive oil, salt and pepper. (amounts are approximate, just sprinkle at will!) Add sliced garlic cloves.

Roast in the oven 20 to 25 minutes, until crisp-tender and the tips of some of the florets are browned.

When it’s done, take it out of the oven. Zest the lemon over the broccoli and then squeeze out the lemon juice on it too. Add a little more olive oil if desired, toasted pine nuts, and Parmesan cheese.
