Layered Taco Dip

Colorful layers of Southwestern ingredients make a fun party dish. Make individual ones in small clear plastic cups for an extra special presentation!

Ingredients

1 can Refried beans
1/2 cup Salsa
3 medium Avocado
2 tablespoons Lemon juice
1/2 teaspoon Salt
1/2 teaspoon Pepper
1 cup Sour cream
1/2 cup Mayonnaise
1 package Taco seasoning mix (2 Tbsp. of Penzey's taco seasoning)
1 cup Cheddar shredded
2 cups Chopped tomatoes
1 can Olives sliced
1 cup Chopped green onion


 

Instructions
Mix refried beans and salsa. Spread in a deep pie pan or 9x9 square pan.
Mash avocado with lemon juice, salt, and pepper. Spread mixture over beans.
Mix sour cream, mayonnaise, and taco seasoning. Spread over avocado layer.
Sprinkle with cheddar cheese, tomatoes, olives, and green onion.
Serve with corn chips for dipping.
