s Kitti's Egg Casserole s   


Kerri, a fellow pastor's wife, shared this recipe from a friend at one of our monthly brunches. Warm and cheesy with green chilies for flavor, it is one of my favorite breakfast casseroles.
Yields: 12 Servings


Ingredients

10 Eggs
1/2 cup Flour
1 teaspoon Baking powder
1 teaspoon Salt
16 ounces Cottage cheese (small curd)
1 lb. Cheddar shredded
1/2 cup Butter melted
1 7 oz. can Green chilies


 
Instructions
Beat eggs until light and fluffy. Blend in flour, baking powder, salt, and butter. (Mixture may be slightly lumpy). Stir in cheeses and chilies (undrained is OK). Pour into a buttered 9x13 casserole dish. Bake at 350 for 35 minutes or until top is browned and center is firm. Serve warm, with salsa if desired.
