Jicama Salad

This colorful side dish is easy to make. I usually double the recipe to use up the whole jicama at once.

Ingredients

1 1/2 cups Jicama peeled, cut into small cubes (1/2 of an average jicama)
1 1/2 cups Cucumber diced (1 English cucumber)
1 1/2 cups Fresh pineapple diced (1/2 of a pineapple)
1 cup Radishes sliced into half moons
1 Lime
1 teaspoon Chili powder
1/2 teaspoon Salt


 

Instructions
Toss veggies and fruit in a large bowl. Squeeze the juice of the lime over top. Season with chili powder and salt to taste.
