s Ginger Beer s   


A refreshing and unusual drink that is great for guests to sip while waiting for the meat to grill!
Yields: 8 Servings


Ingredients

1 lemons (2 if they are small)
1 orange
3/4 cup Fresh ginger peeled, roughly chopped
3/4 cup honey
3/4 cup sugar
1 1/4 cups orange juice
2 cups Boiling water
2 liters sparkling water chilled


 
Instructions
1.Grate 2 tablespoons each of lemon and orange zest. Squeeze 1/3 cup lemon juice from the lemon, and juice from the orange if desired. Set aside.

2.In a food processor, pulse the ginger until coarsely chopped. Add honey and sugar and pulse until just combined. Add the orange and lemon juices and process. Transfer to a large lidded container. Add the orange and lemon zests and 2 cups of boiling water and stir until the sugar dissolves. Cool to room temperature. Cover and refrigerate for at least 24 hours and up to 5 days.

3.To serve, strain the ginger-beer base into a pitcher. Mix with sparkling water (or make individual servings with one part base and one part water). Garnish with lemon and orange slices from additional fruit if desired.

A little labor intensive, but a very good result that is unlike anything that can be bought in a store. Worth the work, I think! The recipe doubles pretty easily.
