This easy salsa is good for the wintertime, since it uses canned tomatoes. Ingredients 1 cloved Garlic peeled and smashed 1/2 small onion roughly chopped 1/2 Jalapeno pepper (opt., increase or decrease to adjust heat) 1 bunch Cilantro medium handful, chopped 1 14 oz can Diced tomatoes 1 10 oz can Original Rotel (spicy for kids--try mild next time) 1 teaspoon honey 1/2 teaspoon salt 1/4 teaspoon ground cumin 1 Lime juiced

Instructions
Mince garlic, onion, jalapeno pepper (if using) and cilantro in a food processor. Add the rest of the ingredients and pulse to combine for 30 seconds or so until all the ingredients are finely chopped and salsa is desired consistency. Taste for seasoning and adjust to taste. Serve with chips or over tacos.
