s Easy Beef Enchiladas s   


It's hard to believe this simple recipe with basic ingredients makes such outstanding full-flavored enchiladas.
Yields: 10 Servings


Ingredients

1 pound Ground beef
1 Onion chopped
1 cup Sour cream nonfat
1 cup Corn kernels frozen
2 cups Mild enchilada sauce (one large can, 2-3 cups)
2 cups Cheese shredded--Monterey Jack, Cheddar, or Mexican
12 Tortillas, flour 6-8 inch size


 
Instructions
In a large non-stick skillet, cook the meat and onion over medium heat for about 6-8 minutes or until meat is browned. Drain any excess grease. Remove from heat and stir in the sour cream, corn, and 1/4 cup enchilada sauce.

Spread about 1/3 cup enchilada sauce on the bottom of a 9x13 baking dish coated with cooking spray. Spoon about 2 Tbsp. of the meat mixture and about 1 Tbsp. of the cheese in the center of each tortilla. Roll tortilla around filling and place seam side down on sauce in baking dish. Pour remaining sauce over the filled enchiladas. Sprinkle with remaining cheese.

To Prepare and Eat Now: Preheat the oven to 350. Bake, covered, for 20 minutes or until toroughly heated. Remove foil and continue baking until the cheese is melted and bubbly.

To Freeze: Do not bake before freezing. Cool to room temperature, then wrap, label, and freeze. Recommended freezing time up to 2 months.

To Prepare After Freezing: Remove from freezer to deforst. Preheat the oven to 350. Bake, covered, for 20-30 minutes or until thoroughly heated. Remove foil and continue baking until cheese is melted and bubbly.
