Cranberry Orange Pinwheels

These slice and bake cookies have a pretty cranberry spiral through them. A good one to keep in the freezer for holiday emergencies!

Ingredients

1 cup Butter
1/2 cup Sugar
1/2 teaspoon Salt
1 Egg yolk
1 teaspoon Vanilla
2 1/4 cups Flour
3/4 cup Dried cranberries
Zest of 1 orange
1/2 cup Orange juice (use juice from orange and add water to make 1/2 cup)


 

Instructions
1. Cream butter, sugar, and salt in medium bowl with mixer on medium speed. Add egg yolk, vanilla, and flour; mix until smooth dough forms. Shape into a ball, then flatten into a disk. Wrap well and chill 1 hour.

2. Meanwhile, combine cranberries, orange rind, and juice in a small saucepan. Bring to a boil over medium heat, stirring until thickened. Chill about 1 hour.

3. On a sheet of waxed paper, roll chilled dough into a 20x8 inch rectangle. Spread cooled filling evenly over dough to within 1/2 inch of edges (filling will be thin and a bit scattered--doesn't cover surface completely).

4. Starting with the 20 inch side, use the waxed paper to help roll dough and enclose the filling. Cut in half to make two 10 inch rolls. Wrap each in plastic wrap and freeze until firm, about 2 hours.

5. Preheat oven to 375. Grease baking sheets. Using a sharp knife, cut dough into 1/4 inch slices. Place 2 inches apart on prepared baking sheets. Bake until ight golden brown, 9-13 minutes.
