s Cracked Wheat Buns s   


This favorite recipe from my mother-in-law yields hearty whole wheat rolls which are slightly sweet, very tender, and easy to make because you don't have to get your hands too messy!
Yields: 2 Dozen


Ingredients

1 cup Boiling water
1 cup Cracked wheat (aka bulgar wheat)
3/4 cup Warm water
1/2 cup Sugar
2 tsp. Salt
1 Egg
1/4 cup Canola Oil
4 1/2 tsp. Yeast (two packets)
3 cups Whole wheat flour (or part flour and part rye, wheat germ and/or ground flax seed)
2 cups Flour


 
Instructions
Pour 1 cup boiling water of cracked wheat and let sit while you assemble the other ingredients.

In large mixer bowl, use the wire whisk attachment to blend 3/4 cup warm water, sugar, salt, egg, oil, and yeast together. Mix for about 1 minute. Let sit for 5 minutes or until foamy. When cracked wheat mixture has cooled to warm instead of hot, stir into yeast mixture.Add 3 cups whole wheat flour and mix for 1 minute.

Change mixer attachement to dough hook and slowly knead in 2 cups white flour. When the dough leaves the bottom of the bowl, stop mixing. Leaving the bowl on the mixer, cover with plastic wrap. Let dough rise until it reaches the top of the bowl.

Remove the plastic wrap. Turn the mixer on for about a minute to knead the dough back down. Remove the dough hook. Cover bowl with plastic wrap again and let rise. (This second rise can be ommitted if necessary for time's sake).

Oil hands, punch down dough, and divide into desired size portions. Place on greased cookie sheet and let rise again. Bake at 400 degrees for 10-13 minutes or until lightly browned.

Rolls can be frozen after baking if desired.
