Chipotle Apple Salad

Crisp, tart apples add a nice crunch to this flavorful salad. Chipotle chiles give the honey dressing a touch of smoky heat.

Ingredients

-- SALAD --
1 bag (8 oz.) Salad greens
3 Granny Smith apples cored and cubed
1/2 cup Red onion sliced
1/2 cup Feta cheese (2 oz.)
4 slices Bacon cooked crisp and crumbled
1/3 cup Sliced almonds toasted
-- DRESSING --
2 tablespoons Cider Vinegar
2 tablespoons Honey
1 tablespoon Olive oil
1 teaspoon Chipotle chile puree (see note)
2 cloves Garlic


 

Instructions
In blender container, combine all dressing ingredients. Blend for 30 seconds or until well mixed.

In large salad bowl, combine greens, apples, and onion. Drizzle dressing over top; toss well to coat. Sprinkle feta, bacon and almonds over the top.

Note: Puree canned chipotle chilies in adobo sauce in blender. Use puree for this recipe; freeze remaining puree in small portions in an ice cube tray to use in other recipes.
