Chicken Tortilla Soup

Delicious and EASY soup recipe that uses mostly canned ingredients! Serve over tortilla chips, and top with avocado and shredded cheese.

Ingredients

1 Onion chopped
2 cloves Garlic minced
1 15 oz can Corn drained (or use frozen)
2 14.5 oz. cans Chicken broth
1 10 oz can Chunk chicken shredded
1 15 oz can Black beans drained and rinsed
1 10 oz can Diced tomatoes with green chile peppers undrained
1 4-7 oz. can Diced green chiles undrained
1 teaspoon Chili powder
1 teaspoon Cumin
1 teaspoon Oregano
1 Lime juiced


 

Instructions
Saute the onion and garlic until soft. Open the cans of corn, chicken broth, chunk chicken, black beans, diced tomatoes, and green chilies. Pour everything into a large saucepan or stock pot. Add spices. Simmer over medium heat until chicken is heated through. Stir in lime juice just before serving.

Top with tortilla chips, diced avocado, sour cream, cilantro, and Monterey Jack cheese.
