Caramelized Apple Upside-Down Cake

This tender, moist cake is topped with sweet caramelized apples, crunchy pecans, and a dollop of Spiced Whipped Cream.

Ingredients

-- TOPPING --
4 tablespoons Butter
6 cups Apple slices (thinly sliced, peeling is opt.) (Granny Smith or Pink Lady, about 2 lbs.)
2/3 cup Brown sugar
2 teaspoons Lemon juice
2 ounces Pecan halves
-- CAKE --
1 1/4 cups Flour
1 teaspoon Baking powder
1 teaspoon Cinnamon
1/2 teaspoon Nutmeg
1/4 teaspoon Allspice
1/4 teaspoon Cardamom
1/2 teaspoon Salt
3/4 cup Sugar
1/2 cup Brown sugar
2 large Eggs
6 tablespoons Butter
1 container Plain Greek yogurt (6-7 oz.)
-- SPICED WHIPPED CREAM --
1 cup Whipping cream
2 tablespoons Powdered sugar
1/2 teaspoon Cinnamon or apple pie spice


 

Instructions
FOR TOPPING
In large skillet, melt butter over medium heat. Add apples; cook stirring occasionally until apples are lightly browned and fork-tender, about 12-15 minutes. Add brown sugar and lemon juice; cook stirring constantly until sugar dissolves and apples are coated, about 1 minute. Stir in pecans. Transfer apples to greased DEEP 9 1/2 inch pie plate or 9x9 baking pan; set aside.
FOR CAKE
In medium bowl, whisk together flour, baking powder, spices, and salt; set aside. In large mixer bowl, beat sugars and eggs at low speed until thick, about 30 second. Slowly beat in butter until well mixed. Beat in yogurt and vanilla. Beat in flour mixture just until moistened. Spread batter evenly over apples in pie plate. Bake in 350° oven until wooden pick inserted in center comes out clean, about 35-40 minutes. Cool on wire rack 20 minutes. Loosen sides of cake with thin knife; invert carefully onto rimmed serving plate. (Apples are loose and sauce isn't thick, so it slides right out with lots of juice on top!) Serve with Spiced Whipped Cream.
WHIPPED CREAM
In large mixer bowl, beat cream, powdered sugar, and cinnamon at high speed until stiff peaks form. Makes about 2 cups.
