Caprese Skewers

These are addicting. The pop of the tomato. The creaminess of the mozzarella. The softness and subtle flavor of the olive oil. The tangy sweetness of the balsamic. And the basil leaf acts like a little cup to capture everything all together.

Ingredients

1 pint Grape tomatoes
20 Fresh basil leaves
1 pound Fresh mozzarella cheese
1/4 cup Extra virgin olive oil
1/4 cup Balsamic Vinegar


 

Instructions
Slice the fresh mozzarella into 1/2 inch thick slices, then cut each slice into about 4 pieces (trying to get a hearty bite-sized piece). Skewer a tomato, a basil leaf, and a piece of mozzarella on a toothpick. Arrange on a serving platter. Sprinkle with a little salt and coarse ground pepper.
Just before serving, drizzle with extra virgin olive oil and balsamic vinegar.
