Cabbage Beef Stew

A tasty beef stew made easier with a few prepared ingredients

Ingredients

1 lb. Lean beef stew meat cut into 1/2 inch cubes
1 large Onion chopped
1 can (14 oz.) Beef broth
1 can (14.5 oz.) Italian-flavored diced tomatoes
2 cloves Garlic minced
1/2 teaspoon Salt
1 teaspoon Pepper
3 medium Red potatoes (about 1 lb.) scrubbed and cubed
3 cups Coleslaw mix (or chopped cabbage)


 

Instructions
In large saucepan, cook meat over medium-high heat until browned. Add onion, broth, tomatoes, garlic, salt and pepper. Bring to a boil. Cover, reduce heat, and simmer for 45 minutes or until meat is tender. Stir in potatoes and slaw mix. Cover and simmer for 12-15 minutes or until potatoes are tender. (If making ahead of time, add potatoes and slaw mix and heat just before serving).
