s Blackberry Spinach Salad s   


This salad is very colorful and has a delicious sweet-tangy dressing.
Yields: 6 Servings


Ingredients

3 cups Mixed greens
3 cups fresh baby spinach
1 cup fresh blackberries
1 cup cherry tomatoes halved
1 green onion sliced
2 Tbsp. chopped walnuts toasted
2 Tbsp. olive oil
1 Tbsp. balsamic vinegar
2 1/2 tsp. honey
1 garlic clove minced
1 tsp. Dijon mustard
1/4 tsp. salt
1/4 tsp. pepper
2 -thirds cups crumbled feta cheese


 
Instructions
In a large salad bowl, combine the spinach, blackberries, tomatoes, onion and walnuts.
In a small bowl or a widemouth canning jar, mix the vinegar, honey, garlic, mustard, salt and pepper. Stir rapidly (or use a blender) and drizzle in the oil to make an emulsion. Drizzle over salad and toss to coat. Sprinkle with cheese. Serve immediately.
