s Barb's Spaghetti Sauce s   


Easy to make, easy to double or triple, and very tasty (especially with Barb's Meatballs!) The tomato paste gives a nice thick texture.
Yields: 8 Servings


Ingredients

3/4 cup Onion chopped (about 1/3 of a large onion)
2 cloves Garlic minced
3 tablespoons Oil
2 1 lb. cans Diced tomatoes (undrained)
2 6 oz. cans Tomato paste
1 teaspoon Garlic salt
1 teaspoon Sugar
1 1/2 teaspoons Salt
1 teaspoon Pepper
2 teaspoons Dried oregano
2 teaspoons Dried basil
1 Bay leaf


 
Instructions
Saute onion and garlic in oil until soft but not browned.
Stir in remaining ingredients.
Simmer uncovered for 30 minutes.
Add more water as needed to adjust texture to your liking.
Add meatballs if desired and simmer, loosely covered, 30 more minutes.
Remove bay leaf before serving.

For staff lunch I multiplied this recipe by 4 to serve 30 people. It barely fit in my stock pot, but it worked! (Needed to divide it to fit in the meatballs!) I served it in a crock pot.
